High on a hillside, farmhouse restaurant Kiyosumi no Sato AWA is quietly changing the way we think about sustainable cuisine. Entering the open plan wooden restaurant space, heirloom vegetables are lined up along tables like artworks. Masayuki and Yoko Miura have made it their mission to protect Nara’s food culture, sourcing traditional Yamato vegetable varieties. Each vegetable is prepared carefully to bring out its flavors. Try a wide variety of locally grown organic produce such as Yamato yam, Imaichi kabu (turnip), Nogawa cucumber, Yuzaki nebuka (onion), and Katahira akane (red turnip).
There is very little waste; the restaurant’s goats happily deal with vegetable scraps. The restaurant has been awarded a Michelin Green Star for excellence in cuisine and efforts to conserve traditional vegetable varieties and cyclical farming, and promote biodiversity in Nara. A second restaurant, AWA Naramachi, is open in Naramachi.
